About Dave
Three generations, one starter called Nora, and a 3am alarm.
Dave opened the bakery in a railway arch in 1987 with a second-hand deck oven and a jar of his mum's sourdough starter. The arch flooded twice. The starter survived both times.
We moved to Mill Yard on Kirkstall Road in 2004, when the queue started blocking the pavement. Dave's daughter Priya runs the bake now. Dave still does the 3am shift on Saturdays because he says nobody else slashes a bloomer right.
Flour comes from mills in Yorkshire and the Dales. Nothing is frozen, nothing is part-baked, and what doesn't sell goes to a food bank on Monday.
